Recipe: Poached egg and asparagus

Poached eggSo years ago I always thought that poached eggs were really tricky to make but follow my lead and you can’t go wrong.

Once I realised how easy it was poached egg has become a regular feature on my menus. And if you want a quick light supper, snack or lunch then poached egg with asparagus is simply divine. The recipe below is enough for one.


  • 2 fresh eggs
  • 8 fresh asparagus tips
  • White vinegar
  • Salt and pepper to taste


  • Steam asparagus until al dente and plate up
  • Add a tablespoon of vinegar to a pan of water
  • Break eggs into a bowl (be careful not to break the yolk or stir them)
  • Once water is simmering vigorously, stir the water while adding eggs to the pan (again be careful not to break the yolk)
  • Simmer for 3 minutes exactly
  • Carefully remove eggs with a strainer spoon and place on top of the asparagus
  • Add salt and pepper to taste
  • Enjoy!
