With Shrove Tuesday, otherwise known as pancake day, upon us. I thought I would share my pancake recipe with you. This is a pretty foolproof and delivers around eight wonderful pancakes every time. Once you have made up the batter the pancakes are so quick to cook you’d be forgiven for having them every day not just on pancake day.
I like mine in very simple style with lemon and sugar, but they are delicious with nutella or maple syrup too. How do you eat yours?
125g plain flour
Butter to taste
Lemon to taste
Sugar to taste
Make a well in the flour, add the eggs and whisk
Continue whisking and gradually add the milk
Whisk until smooth and allow to rest for 30 minutes
Add a drop of cooking oil to a non-stick frying pan
When the pan is hot ladle in enough batter to evenly and thinly cover the base of the pan
Cook until golden brown and then flip, cook until golden brown
Serve with butter, lemon and sugar
